The RapidChek™ Total Protein test is a colorimetric assay designed to
screen surfaces for protein residues. Insufficient cleaning can result in
unhygienic conditions. Testing surfaces or C.I.P. rinse fluids for protein
residues can therefore help to verify the effectiveness of a sanitation program
and an excellent allergen screening option.
The “protein error” test method is based on chemical reactions
that occur in the presence of amino acids, peptides and proteins. When proteins
are present on the sampled surface and brought into contact with the reagent on
the test strip, a visually noticeable change of color from yellow to blue will
occur within 30 seconds.
The limit of detection (LOD) is 3 μg for total protein (bovine serum albumin as control). This test does not require incubation and no additional equipment, aside from a device for the application of deionized or distilled water, is needed. Only the swab pad comes into contact with the surface, so no cleaning after testing the surface is necessary. The LOD limit can vary depending on the source of the protein.
RapidChek Total Protein test systems are a perfect complement to any microbial hygiene/allergen screening program as they can provide hygiene indicators immediately prior to the start of a production run.
