quantitative determination of wild yeast populations in brewing culture yeast,
and especially Saccharomyces wild yeast.
LWYM is used for the detection and quantitative determination
of wild yeast populations in brewing culture yeast. It is designed to
encourage the growth of Saccharomyces wild yeasts primarily, such as S.
cerevisiae var. diastaticus, but a number of non-Saccharomyces yeast may also be able to grow on this medium. An
inoculum of approximately 1 million culture yeast cells needs to be plated on
LWYM. While the growth of culture yeast will be suppressed by crystal violet,
wild yeast will develop as large, distinct colonies
